The Honey Thief Bakery is a family run business opening in December 2014. We specialise in naturally leavened, sourdough bread. We start with organic, stoneground flour, water and salt, that's it!

Sunny days guarantee that our outside seating will be full of guests relaxing and enjoying a Cartel Roasters coffee and a treat or two.  On not-so-sunny days, we also offer comfortable seating inside our bakery with free wifi.

Within six months of opening - our little bakery had won the Overall Champion Trophy for Artisan/Specialty Bread at the Australian Food Awards.

    FAQ's

    Do you have any sourdough

    All our bread is sourdough, or more correctly, naturally leavened bread. This means our bread is made from flour, water and salt. The addition of sourdough starter encourages fermentation which helps the bread to rise and promotes complexity and flavour.

    The exception to this are our baguettes, Turkish rolls and ciabatta. For these, we use a polish method, whereby a tiny amount of commercial yeast is used. 

    Why the name - Honey Thief?

    A few reasons...Christian had a book called "the History of Sweets" which described how the first cakes were probably our caveman ancestors grinding seeds to make flour, mixed with wild honey. We also found a vintage swap card similar to the artwork in the bakery. Finally, we thought it might be our way to remind people of the importance of protecting and nurturing bees. They'e pretty important! We love bees so much we have our own hive. Our beautiful Blackburn Lake Honey is available to purchase at the bakery.

    What is a beesting?

    Our beesting is a brioche bun, filled with pastry cream custard finished with a honeyed almond topping. Deceptively simple, absolutely delicious!

    Do you have anything gluten free?

    Flourless chocolate raspberry cupcakes, nut and seed loaf, and almond macaroon biscuits that are gluten friendly. But, if you are a medically diagnosed coeliac, we don't recommend any of our products due to the airborne particles of flour always present on our premises. 

    Can you slice bread?

    Yes, we can! Toast, or sandwich, or half and half so you can start using your loaf for sandwiches, then after a day or so, use the rest for  toast. 

    Can you freeze bread?

    Yes, we recommend double wrapping in two plastic bags to stop freezer burn. Use within 3 months.
